So as many of you probably know, I started Weight Watchers last summer and have lost about 31lbs! I still have a little ways to go; but the program really works! The recipe that I am going to blog about tonight is adapted from their new cookbook Turn Up the Flavor. Guacamole
I don’t know about you all, but I love avocados! One of my favorite snacks or appetizers is guacamole, and it is really easy to make! Many of the pre-made versions you can buy in the store actually do not contain very much avocado, and may contain additives and preservatives that I do NOT want in my food. For this reason I like to make my own guacamole and enjoy the fresh taste and health benefits of real avocados. Open a Pomegranate
Since pomegranates are still in season it is a really great time to enjoy them! This time of year most grocery stores carry them and they are easy to find. I suspect that a lot of people don’t know how to open pomegranates and eat them easily, so they either avoid them because they are inconvenient to eat, or pay top dollar for arils (the pomegranate seeds) that are already removed. Healthy Cookie Dough Dip
Okay, I know what your thinking… cookie dough dip? How could this be healthy!?! Well… this cookie dough dip is healthy and it totally doesn’t taste healthy either! I made this for my bible study and it was a big hit! No one guessed that it was healthy or had any idea that my secret ingredient was beans until I told them! Yup beans! Vegetarian Eggplant Lasagna
So since Lent is starting today (Ash Wednesday), I thought a meatless dish would be an appropriate topic for my post tonight. I know during lent, I am always looking for new vegetarian/fish dishes to try! This is really a play on lasagna, and I subbed out the noodles with eggplant. It still gives you the feel of a cheesy tomatoey Italian dish, but without the carb overdose!
