Mom’s Sweet Potatoes
Hi Everyone!!! I hope you all had a great week last week…. last week was a little hard for me because it was my first week back from a great vacation! It is always hard to go back to work and reality after a vacation! While I was on vacation, I got to go wine tasting, and have high tea, (which I will tell you about in a later post!) and I got to visit some of my college friends in Long Island. I even got to go to the beach, which is like heaven for me! :-)
Anyways… I did try to make a healthy coconut panna cotta for you this week, but unfortunately it did not set…. and I ended up with coconut soup! It tasted okay… but I definitely need to try again! So instead, this week I have decided to share a super easy, super delicious side dish! This is my Mom’s recipe for sweet potatoes. I do not know how she thought of this recipe, but it is soooo yummy and good for you too! They are the perfect combination of sweet, salty, and a touch of spicy! It is so easy to throw together, especially when you have worked all day. While it is baking you can work on making a piece of meat and a salad to go with it! Its a cinch! Here is the recipe!
Ingredients:
- 4 small sweet potatoes, peeled and cut into large strips
- 1 1/2 Tbsp olive oil
- 1/2 tsp salt
- 1 Tbsp chili powder
Instructions:
Preheat your oven to 375 degrees F. Peel and cut the potatoes and put them in a glass baking dish. Add the remaining ingredients to the dish and stir them all together so that the potatoes are coated evenly. Cover the dish and bake for approximately 45 minutes, or until the potatoes are tender when you poke them with a fork. Let them cool a little and enjoy!
