Fish Tacos with Pineapple Salsa
This is one of my favorite summer recipes and it tastes like it isn’t easy, but it totally is! These tacos are also super healthy. They are really different from your traditional taco, but even more delicious in my opinion, but you will have to check them out for yourselves! Please let me know what you think!!! :-)
Ingredients:
- 8 corn tortillas
- 1 1/3 lbs Mahi Mahi filets
- 2 tsp olive oil
- Cajun seasoning
- 4 oz. Queso Panela, crumbled (This is a really yummy Mexican cheese, that is like a mild feta. If you can’t find it you could substitute shredded Monterrey jack cheese. Wegman’s sells this cheese.)
- 1 medium avocado, peeled and sliced
- Pineapple Salsa (recipe to follow)
Instructions:
Wrap the corn tortillas in a wet paper towel and then wrap them in aluminum foil, set aside. Coat the mahi mahi with the olive oil, and sprinkle Cajun seasoning on them until they are as coated as you would like. Heat up a grill and place the mahi mahi and tortillas on the grill. Cook the mahi mahi until it turns an opaque white color, and heat the tortillas until they are hot all the way through. If you do not have a grill, you can cook the mahi mahi in the oven, on a cookie sheet and the tortillas can be heated in a microwave. Just make sure you leave off the foil if you are cooking the tortillas in a microwave!!! It is very important to cook the tortillas well, or they will be brittle and break when you try to use them.
Divide the fish amongst the tortillas. Top each taco with the sliced avocado and pineapple salsa. Sprinkle the queso panela on top of each taco. Enjoy your fish tacos!!!!

Ingredients:
- 1/3 of a fresh pineapple, finely diced
- 1 small cucumber, finely diced
- 1 handful of cilantro, chopped
- 1/4 of a sweet onion, finely diced
- 1 jalapeno pepper, finely diced
- Juice from one lime
- salt and pepper to taste
Instructions:
Combine all ingredients in a bowl and stir together. Set aside for at least a half an hour before you eat it. This salsa will continue to taste better and is actually best left overnight. Enjoy!
