Fast and Easy Cinnamon Rolls with Cream Cheese Frosting
These delicious cinnamon buns are yeast free and quick to make!
Ingredients
- 2 cups of flour
- 2 T sugar
- 1 T +1t of baking powder (This is what makes it poof!)
- 1/2 t salt
- 1/4 cup butter (cold)
- 3/4 cup milk
- 1/3 cup butter (room temperature)
- 3/4 cup of coconut sugar
- 4 T cinnamon
- 4oz of cream cheese
- 1/4 cup butter
- 1t vanilla extract
- 3T milk
- 1/2lb powdered sugar
Instructions
Preheat your oven to 350F. Mix the flour, sugar, baking powder, and salt together. Cut the cold butter into the mixture until it is crumbly. It helps to slice the butter into small bits before putting it into the mixture. Pour in the milk and mix all of the ingredients together. You may need to add a little bit more flour if the dough is too sticky. Kneed the dough a few times.
On a cutting board or other flat surface dusted with flour, roll the dough out into a rectangular shape, about 1/4″ thick.
Spread the room temperature butter all over the dough. Sprinkle the coconut sugar and cinnamon evenly over the top of the dough. Roll the dough up into one giant roll. Cut into 10 cinnamon buns. Carefully place each bun into a greased 9″ square pan.
Bake at 350F, for 30 minutes.
While the buns are baking, make the frosting. Microwave the butter and sugar for about 30s, or until softened. Stir in the vanilla extract and milk. Whisk in the powdered sugar.
Once the rolls are out of the oven, pour the frosting on top of the cinnamon buns and enjoy!
Notes
I highly recommend full fat cream cheese for this recipe and not to skimp with anything less.
Brown sugar can be substituted for coconut sugar if you don't have coconut sugar on hand, however coconut sugar has a lower glycemic index.
