Hi Everyone! I recently started watching the Amazon show, The Marvelous Mrs. Maisel. If you haven’t seen it, you really should. Season two just came out, and it is hilarous! Anyway, the main characters are Jewish, and they are always eating amazingly delicious Jewish food at a New York deli. For some reason this and the fact that it is the holiday season made me CRAVE latkes. So I decided to come up with a recipe and make my own version. I think they came out quite well! Enjoy!

As I am writing this post I am awaiting the hurricane Irma in Tampa, Florida. I am very scared, but very grateful to be with friends as we hunker down to wait for the storm. Hi Everyone! Today I want to share with you a very simple recipe that is perfect during lent for meatless Fridays. My sitto (grandma in Arabic) used to make it all the time! It is extremely easy to make, delicious, and very healthy! This meal goes very well with any kind of pickles and also beets. I served mine with pickled beets and baby dill pickles. Pepperoncini peppers and pickled turnips also go extremely well with this meal. I hope you will enjoy it!
