Honey Sesame Chicken
Happy Hump Day!!!!! Have you all seen the Geico hump day commercial? I always look forward to hump day because every hump day morning at work there is a guy who impersonates the Geico camel and it is a funny way to start the day! He actually sounds quite like the commercial! You have to look forward to the little things in life sometimes! Today I am going to share with you a recipe that I found from Skinny Taste, which is one of my favorite blogs with Weight Watchers recipes. I had been wishing for a new crock pot recipe, since it is SO nice to come home…

Pomegranate Brussel Sprout Salad
Firstly I would like to wish you all a Happy New Years and Merry Christmas!!! Unfortunately, it has been a long time since I have been able to post, but the holiday season is always busy! Fortunately for me most of my busyness has been good! I have had lots of good times with my family, my boyfriend Phil, and his family too! Admittedly, I did get a little bit off track with Weight Watchers and tracking, so I am a little bit afraid to weigh in this Saturday, but I am pumped to get back on track and lose the last ten pounds that I am hoping to lose!…

Curried Cauliflower
Hi Everyone! Last night for dinner I had an idea that I was pretty excited about… and it came out even better than I thought! I got the idea from Wegmans (I know… big surprise!) six dollar meals. One of the side dishes they offer is curried cauliflower, which I have gotten before and enjoyed. So I decided to try to duplicate the recipe and it came out even better! I was super impressed! This dish is super low in points, very healthy, and it is delicious; like regular roasted cauliflower, but with a seriously awesome amped up flavor! It is also super easy (and fun!) to make! I hope…

Homemade Hot Cocoa
So it is definitely fall! The weather is starting to get colder and it has even snowed here in the Northeast, although it did not stick. I am sure it is only a short while before we will have oodles of snow! When the weather is cold, I really like to enjoy hot cocoa, but the powdered mixes are often high in points, and contain hydrogenated oils or trans fat… which is not a good thing! Last night, I came up with this recipe for homemade hot cocoa, and it is low in points and has no artificial ingredients, like partially hydrogenated oil! My boyfriend and I enjoyed it while…

Pumpkin Cheesecake Bars
Last week at work we had a Fall Harvest Potluck for lunch! I wanted to make something with a fall theme, so I decided to try to make pumpkin cheesecake bars. I got my inspiration from this website, and just substituted a few ingredients based on what I had. The results were really delicious, and I think that everyone enjoyed them! Although I do not claim that these are healthy, they are not too high in points and are a great fall treat! Here is the recipe! Ingredients: Crust: 42 Ginger Snaps (I used Nabisco brand) 5 Tbsp butter, melted Cheesecake 8 oz Neufchâtel cheese (1/3 less fat Cream Cheese),…
