    Okay, I have an adventure to tell you about with this recipe!  It all started when my little sister Laura brought a bunch of of her friends home for a weekend awhile back.  I went home as well to meet them and hang out…. and also to learn how to make Korean Barbeque, otherwise known as, Bulgogi, from her friend Jaewon (Thank you Jaewon!!!).  While my sister was showing her friends around our hometown, my mom and I did the prep work for this dish.  We, chopped up mushrooms, green onions, carrots, and onions.  We also marinated the meat.     Award Winning White Chicken Chili

      Hello Everyone!!!  I hope you are all keeping warm in this cold weather that just seems to keep sticking around… Hopefully spring will come soon… Today I am going to write about a comforting recipe that will warm you right up on these cold evenings.  Shepherd’s Pie!     Spicy Orange Beef

    So as many of you probably know, I started Weight Watchers last summer and have lost about 31lbs!  I still have a little ways to go; but the program really works!  The recipe that I am going to blog about tonight is adapted from their new cookbook Turn Up the Flavor.  I have to say that so far I have enjoyed the cookbook, and the recipes I have tried all have been good.  One recipe that turned out really well is Spicy Orange Beef (Spicy Tangerine Beef in the cookbook), and it is only 4WWPP!!  I made some slight modifications and paired it with some jasmine rice for a fabulous…

    Vegetarian Eggplant Lasagna

    So since Lent is starting today (Ash Wednesday), I thought a meatless dish would be an appropriate topic for my post tonight.  I know during lent, I am always looking for new vegetarian/fish dishes to try!  This is really a play on lasagna, and I subbed out the noodles with eggplant.  It still gives you the feel of a cheesy tomatoey Italian dish, but without the carb overdose! It also can totally stand on its own with a nice salad or cut up veggies and does not need to be served with meat!  I hope you all enjoy!
