    Chocolate Chia Pudding

Hi Everyone!  Things have just been super crazy busy for me lately!  I don’t know what it is, but things just do NOT want to happen easily for me this week!  When I have tons of craziness during the day, I crave chocolate.  But…. I don’t really want to blow my diet, or eat anything unhealthy.  I am guessing that some of you can probably relate to this dilemma.  Well, if you do relate to this, I have a solution!  Chocolate Chia Pudding!  This is a super healthy, chocolatey, and yummy recipe!  It gives me my chocolate fix, and honestly there really is nothing unhealthy about it!  So I do…

    Rhubarb Crisp

Happy Memorial Day weekend everyone!  It is rainy, damp, and dreary outside as I write to you, and nearly freezing!  I think it may have even been snowing/sleeting earlier today!  We have been having EXTREME weather this week.  I kid you not, but earlier this week it was 90 degrees! It’s crazy!  I guess I should be very thankful for this weather though, since other parts of the country have been hit hard by terrible tornadoes… And this weekend, I think the weather will improve and become a bit more normal for this time of year….. which is the perfect time of year to pick and cook with rhubarb! For…

    Fresh Papaya

Hi Everyone!  Since I started doing Weight Watchers I have been eating a lot more fruits and vegetables, mostly because they are zero points.  They are also a healthy and delicious snack!   I normally take a couple pieces of fruit or some cut up veggies with me to work every day to snack on, and this helps to keep me from being tempted by cookies or other unhealthy snacks that may be readily available at work. When I go shopping, especially at Wegmans, there are TONS of different types of fresh produce to look at.  I often try to look for one new type of fruit or vegetable that I…

    Homemade Ranch Dressing

Hi everyone!  Tonight I want to share with you a recipe for ranch dressing.  Ranch dressing is my Dad’s favorite salad dressing and I have tried time and again to make it for him, but not with the best results.  I was stupidly trying to make ranch dressing without buttermilk, because I don’t normally keep it in my kitchen and my Mom doesn’t keep it in hers either.  I tried sour cream, mayonnaise, milk, yogurt, and various other combinations of ingredients, with only so-so results. I finally broke down, and tried a recipe with buttermilk, and I am telling you; it is the key ingredient!  Totally worth it, and I…

    Spicy Orange Beef

So as many of you probably know, I started Weight Watchers last summer and have lost about 31lbs!  I still have a little ways to go; but the program really works!  The recipe that I am going to blog about tonight is adapted from their new cookbook Turn Up the Flavor.  I have to say that so far I have enjoyed the cookbook, and the recipes I have tried all have been good.  One recipe that turned out really well is Spicy Orange Beef (Spicy Tangerine Beef in the cookbook), and it is only 4WWPP!!  I made some slight modifications and paired it with some jasmine rice for a fabulous…
