Butternut Squash Turkey Chili
Hello Everyone! I would just like to share that I bought a jasmine plant about a month ago, and it is finally in bloom! I am so happy that I have been able to keep it alive, and also that I live in Florida, and there is no snow!
Today I am going to share a recipe for Butternut Squash Turkey Chili. It is completely Whole30 compliant, and also Paleo compliant; so it’s super healthy. It is also super easy, and truly a one pot meal! Instead of using beans, as a traditional chili, I substitute butternut squash. It lightens it up and gives the chili a whole new flair! This meal also freezes well, so I like to make a big pot and freeze individual portions. When I need an easy lunch to take to work, or I don’t feel like cooking dinner, it is there. An easy Whole30 compliant and Paleo Turkey Butternut Squash Chili Heat the olive oil in a large pot over medium high heat. Add the turkey and cook until browned. Next add the garlic, onion, celery, chili powder, cumin, red pepper, salt, and pepper. Continue to cook over medium high heat, stirring frequently, until the onion and celery are tender. Next add in the butternut squash, tomatoes, and water. Stir, and bring the mixture to a boil. Once the mixture is boiling, lower the temperature so that the chili simmers. Let the chili simmer at least 15 minutes, until the butternut squash is tender. Taste and add more salt or crushed red pepper as desired. Serve with toppings.
