Tabouli Salad

Hello everyone!  It has been a very long time since I have posted, but I am ready to start blogging again!  Today I am going to share with you one of my favorite salad recipes from my childhood.  It is called Tabouli.  This is an Arabic salad that my Sitto (Grandmother in Arabic) used to make all the time!  This is a wonderful, refreshing, healthy summer dish that I hope you all will enjoy too!

This healthy and delicious tart and tangy Middle Eastern salad is always a hit!

Prep Time 15 minutes
Additional Time 15 minutes
Total Time 30 minutes

Ingredients

  • 1 bunch of parsley
  • 3 medium tomatoes
  • 1 small sweet onion
  • 1/2 tsp salt
  • 2 Tbsp olive oil
  • juice of 2 limes or lemons and extra to taste
  • pinch of black pepper (to taste)
  • bulgur wheat, fine

Instructions

  1. Place the bulgur in a large bowl.
  2. Using a cutting board with slots to collect liquid, dice the tomatoes finely.
  3. Put the tomatoes and all of the juice from the tomatoes into the bowl with the bulgur and mix. This juice will soak into the wheat and will add much more flavor than if you soaked the wheat in water first. Set aside to soak for 15 minutes.
  4. While the bulgur wheat is soaking, chop the onion finely and chop the parsley finely. You may use a food processor for this if desired, or chop by hand. The key is chopping very finely.
  5. Add the parsley and onion into the bowl with the tomatoes and bulgur and stir.
  6. Add the salt, olive oil, lemon/lime juice, and black pepper to the bowl and stir completely.
  7. Taste the mixture and add more lime/lime juice and pepper as desired.
  8. Let the mixture sit for another 5 minutes and it is ready to enjoy!

Notes

This salad goes very well with burgers and a cook out!
