Curried Cauliflower
Hi Everyone! Last night for dinner I had an idea that I was pretty excited about… and it came out even better than I thought! I got the idea from Wegmans (I know… big surprise!) six dollar meals. One of the side dishes they offer is curried cauliflower, which I have gotten before and enjoyed. So I decided to try to duplicate the recipe and it came out even better! I was super impressed! This dish is super low in points, very healthy, and it is delicious; like regular roasted cauliflower, but with a seriously awesome amped up flavor! It is also super easy (and fun!) to make! I hope…

Homemade Hot Cocoa
So it is definitely fall! The weather is starting to get colder and it has even snowed here in the Northeast, although it did not stick. I am sure it is only a short while before we will have oodles of snow! When the weather is cold, I really like to enjoy hot cocoa, but the powdered mixes are often high in points, and contain hydrogenated oils or trans fat… which is not a good thing! Pumpkin Cheesecake Bars
Last week at work we had a Fall Harvest Potluck for lunch! I wanted to make something with a fall theme, so I decided to try to make pumpkin cheesecake bars. I got my inspiration from this website, and just substituted a few ingredients based on what I had. The results were really delicious, and I think that everyone enjoyed them! Although I do not claim that these are healthy, they are not too high in points and are a great fall treat! Here is the recipe! Ingredients: Crust: 42 Ginger Snaps (I used Nabisco brand) 5 Tbsp butter, melted Cheesecake 8 oz Neufchâtel cheese (1/3 less fat Cream Cheese),…

For those of you who don’t know, this means that I am at my goal weight, and I have maintained it for 6 weeks. I have lost a total of 50 lbs and I feel great! Now it is time to go shopping because most of my clothes are too big!! On another note, today I am going to share a recipe for steamed clams, which is something I have always wanted to try to make. Clams are really expensive, but I got an email from…

Apple Crisp For Two!
Hi Everyone! As much as I love summer, I finally decided that it is time to embrace fall. So today I have a really sweet recipe for you, Apple Crisp For Two! This dessert is totally yummy, so easy to make, and only makes two servings! You could even make just a single serving if you wanted just by dividing all of the ingredients in half! I made it for my boyfriend Phil and I to eat during a football game and it was a big hit! We both really enjoyed it, and we weren’t tempted to eat a huge amount because it was only two servings! No leftovers! If…
