Crock-Pot Moroccan Chicken Stew

This recipe is one that my husband and I have recently started making.  It is super easy as you can just throw all of the ingredients into the crock pot and then just leave it all day.  The smell is amazing with all of the spices in this stew and fills the house.  The chicken thighs are moist and delicious and make a wonderful stew.  They basically are falling apart by the time is stew is finished.  I love the addition of dates as they add just the right amount of sweetness.  The cilantro and toasted pine nuts take it over the top.

Crock Pot Moroccan Chicken Stew - Simply Scrumptious by Sarah

This is a warm and delicious and nutritious stew with an exotic taste and lots of spices. It is super easy to make and uses chicken thighs.

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 onion finely chopped
  • 2 cloves crushed garlic
  • 1 lb baby carrots
  • 2 tsp dried ginger
  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp ground cardamom
  • 8 dates chopped into small pieces
  • 1/3 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • 1/3 cup pine nuts
  • 1 cup brown rice

Instructions

  1. Place all the ingredients except for the rice, cilantro, olive oil, and pine nuts into the crock pot and stir toghether so that spices are mixed throughout.
  2. Cook on low for 8 hours.
  3. About an hour before the chicken stew is done, place the rice in a pot with 2 cups of water and a few shakes of salt. Bring to a boil and then simmer covered until the rice is done ~ about 40 minutes.
  4. In a small pan add the olive oil and heat on medium heat. Add the pine nuts to the oil stirring occaisionally until they are toasted to the desired level.
  5. Serve the stew on top of the brown rice and top with chopped cilantro and toasted pine nuts.
  6. Enjoy

Notes

Raisins could be substituted for the dates if you do not have them, and if you prefer white rice or cauliflower rice that will also work as well.
